Ingredients:
- 500 g ripe tomatoes, roughly chopped
- 1/2 onion, roughly chopped
- 1 garlic clove, chopped
- 1 carrot, peeled and roughly chopped
- 1/2 stick of celery, roughly chopped
- 500 ml vegetable broth
- 1 tablespoon of Josty hemp oil
- salt and pepper to taste
- Fresh basil for garnish
Preparation:

Heat the Josty hemp oil in a large saucepan. Add the chopped onion and garlic and sauté over medium heat until translucent.

Add the chopped carrots and celery and sauté for another 5 minutes until soft.

Add the roughly chopped tomatoes to the pot and fry briefly with the other ingredients.

Add the vegetable stock and bring the soup to a boil. Reduce the heat and simmer the soup for about 20-25 minutes, until the vegetables are tender.

Remove the soup from the heat and puree with a hand blender or in a stand mixer until smooth.

Season the soup with salt and pepper and add more seasoning if necessary.

Before serving, ladle the soup into bowls or plates and garnish with fresh basil. Drizzle a generous splash of Josty Hemp Oil over each serving.
