Ingredients:
- 2 tablespoons Josty sesame oil
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1 piece of ginger (approx. 2 cm), peeled and finely chopped
- Vegetables of your choice (e.g. carrots, peppers, zucchini, broccoli, peas), cut into bite-sized pieces
- 2 tablespoons curry paste (depending on taste and spiciness)
- 400 ml coconut milk
- salt and pepper to taste
- Fresh coriander or parsley to garnish (optional)
- Cooked rice or naan bread to serve
Preparation:

In a large saucepan, heat the Josty sesame oil over medium heat. Add the chopped onion, garlic and ginger and sauté until fragrant and lightly browned, about 2-3 minutes.

Add the prepared vegetables and cook for another 5-7 minutes, stirring occasionally, until lightly browned and beginning to soften.

Add the curry paste to the vegetables and stir well to coat the vegetables evenly. Cook for about 1 minute to release the flavors.

Pour the coconut milk into the pot and mix well. Reduce the heat and let the curry simmer for about 15-20 minutes, until the vegetables are tender and the sauce has thickened.

Season the curry with salt and pepper and add more seasoning if necessary.

Before serving, garnish the curry with fresh coriander or parsley, if desired.

Serve hot with cooked rice or naan bread and enjoy!
