Ingredients:
- 200 g hummus
- 1 tablespoon Josty Black Sesame Oil (plus extra for serving)
- 1 large sweet potato, peeled and diced
- 2 tomatoes, sliced
- 1 radicchio, cut into strips
- 1 chicken breast fillet
- salt and pepper to taste
- olive oil for frying
Directions:
- Preheat the oven to 200°C.
- Place the sweet potato slices, tomatoes and halved radicchio and chicken breast on a baking sheet and drizzle with a little Josty Black Sesame Oil. Season with salt and pepper. Bake for about 20-25 minutes until soft and lightly browned.
- Spread the hummus evenly on a serving plate and drizzle with Josty Black Sesame Oil.
- Arrange the baked vegetables on the hummus.
- Place the baked chicken breast fillet on the vegetables.
- Drizzle with some Josty Black Sesame Oil before serving.
- Garnish with fresh herbs as desired and serve.
