Oven Roasted Vegetables with Hummus and Chicken Breast with Josty Black Sesame Oil

Ingredients:

  • 200 g hummus
  • 1 tablespoon Josty Black Sesame Oil (plus extra for serving)
  • 1 large sweet potato, peeled and diced
  • 2 tomatoes, sliced
  • 1 radicchio, cut into strips
  • 1 chicken breast fillet
  • salt and pepper to taste
  • olive oil for frying

Directions:

  1. Preheat the oven to 200°C.
  2. Place the sweet potato slices, tomatoes and halved radicchio and chicken breast on a baking sheet and drizzle with a little Josty Black Sesame Oil. Season with salt and pepper. Bake for about 20-25 minutes until soft and lightly browned.
  3. Spread the hummus evenly on a serving plate and drizzle with Josty Black Sesame Oil.
  4. Arrange the baked vegetables on the hummus.
  5. Place the baked chicken breast fillet on the vegetables.
  6. Drizzle with some Josty Black Sesame Oil before serving.
  7. Garnish with fresh herbs as desired and serve.
